Super gifted wine dynamo Jo Marsh was snapped up out of university into Southcorp’s graduate program and made wine at Penfold’s and Seppelt before being lured to the Alpine Valleys as head winemaker at Feathertop. Jo has also been a Len Evans scholar, Young Gun of Wine Finalist in 2016, with vintages in Napa Valley and Burgundy.
Jo established Billy Button in 2014 – working with a network of growers of 30 grape varieties (many Italian) and using ancient winemaking techniques like clay amphora. The winemaking team also includes Glenn James and Alex Philips. Billy Button Wines are small-batch, limited release and designed to be enjoyed with food friendly wines. “For me the most important thing is texture and mouthful and how the wine will pair with food” Jo Marsh

The fruit was separated into a couple of different parcels to craft this wine. One batch was skin contacted overnight (to extract colour and flavour), pressed out and allowed to ferment with wild yeast on full solids in a Flexcube. The other batch was whole-bunch pressed, settled and roughly racked to a Flexcube (*Flexcubes replicates oak* ) and inoculated with selected yeast. The wines were sulphured at the completion of primary ferment and then matured on lees in the Flexcube for 9 months prior to blending, filtration and bottling.
