Billy Button is named after the yellow native flowers shaped like balls that bounce on the tops of the Alpine Valleys. Billy Button Wines burst onto the scene in 2014. With a wealth of established vineyards in the region tended to by dedicated growers, there was no reason for Billy Button to establish their own vineyards. Instead they work with a number of highly accomplished local growers to secure some of the best fruit available in the region. The wines they make focus on varietal diversity.
|Wine||A textural blend of predominantly Italian varieties, The 'Wildflower" range is ready to drink now. This Bianco is a blend of eight varieties made up of predominantly Vermentino, Garganega, Arneis and Sauvignon Blanc. Fruit was predominantly sourced from the Alpine Valleys with the exception being the Garganega and Gewürztraminer, which were sourced from King Valley. A small batch ethos was implemented with all batches kept separate until the final blending. Wines were fermented in stainless steel using indigenous and selected yeast strains depending on the batch. Some batches were matured on yeast lees for up to 10 months. Other parcels, such as the Gewürztraminer and Vermentino were allowed extended time on skins prior to pressing. The salinity follows through on the pallet and pairs nicely with fine texture and a slight creaminess owed to time on lees.|
