Billy Button is named after the yellow native flowers shaped like balls that bounce on the tops of the Alpine Valleys. Billy Button Wines burst onto the scene in 2014. With a wealth of established vineyards in the region tended to by dedicated growers, there was no reason for Billy Button to establish their own vineyards. Instead they work with a number of highly accomplished local growers to secure some of the best fruit available in the region. The wines they make focus on varietal diversity.
|Wine||The coolness of the Alpine Valleys lends itself to good acid retention and you could say this wine has the aromatic style of a Grigio and the textural qualities of a Gris on the palate. The fruit for this wine was sourced from three different vineyards, all in the Alpine Valleys GI. Some parcels were handpicked and whole bunch pressed, while other parcels were machine harvested and pressed. The batches were fermented in a combination of stainless steel and large format old oak. Some parcels were cold settled, racked and inoculated. Other parcels were fermented with indigenous yeasts on full solids. The wines were then matured on lees for a further five months, before filtration and bottling.|
Refreshing citrus and vibrant acidity paired with a richness owed to extended time on lees.
